Instant Pot Turkey Swamp
A hearty one-pot turkey and rice stew rich with flavor from turkey drumsticks, thighs, and aromatic vegetables.
Ingredients
- 1 turkey thigh (bone-in)
- 1 turkey drumstick (bone-in)
- 2 stalks celery, finely chopped
- 2 carrots, finely chopped
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon oil (olive or vegetable)
- 6 cups water (or low-sodium broth)
- 1/2 to 3/4 cup rice (white or jasmine)
- Salt and black pepper to taste
- Optional garnish: fresh parsley or a squeeze of lemon
Instructions
- Sear the turkey:
Set the Instant Pot to Sauté mode. Add the oil, then sear the turkey thigh and drumstick for about 5 minutes per side, until nicely browned. Remove the turkey and set it aside. - Sauté the vegetables:
Add the celery, carrots, onion, and garlic to the pot. Cook for about 3–4 minutes, stirring occasionally, until softened and fragrant. - Combine and cook:
Return the turkey pieces to the pot. Add the water (or broth), rice, and a pinch of salt and black pepper. Stir to combine and scrape up any browned bits from the bottom. - Pressure cook:
Cancel the Sauté function. Close and lock the lid, ensuring the pressure valve is set to Sealing. Set the Instant Pot to Manual or Pressure Cook for 40 minutes on high pressure. - Release pressure:
Allow the pressure to release naturally for 10 minutes, then carefully perform a quick release to release any remaining pressure. - Finish and serve:
Remove the turkey pieces. Once cool enough to handle, pull the meat from the bones and return it to the pot. Adjust seasoning with additional salt and pepper to taste.
Serve warm as a rustic stew, or over rice for a thicker meal.
